Making poffertjes is pretty simple. All you need is :
- Buckwheat flour
- Eggs
- Baking powder
- A little milk.
Once all the ingredients are well mixed, you need to place the batter in a saucepan, much as you would with pancakes.
For traditional Poffertjes, you'll need a special pan, cast-iron, with shallow, half-round moulds.
When one side is cooked, the poffertjes are turned over until the other side is cooked, then served with a dusting of powdered sugar and a spoonful of butter.
